Midweek Dinner — Clean-Up Crew

Clean-Up Crew restores the space after dinner and keeps dishes moving during the meal window. Clean-up is the “reverse” of setup, plus dishwashing and kitchen reset from 5:00–7:00 PM.

What You’re Responsible For

Dish Flow (5:00–7:00 PM)

  • Wash dishes and keep them moving (don’t let the sink pile up).
  • Put away clean dishes in the correct locations.
  • Keep counters and sink areas clear and usable.
Goal: Keep the kitchen usable during service and leave the entire space cleaner than you found it.

Reverse Setup (Dining Area)

  • Take down the drinks/desserts table setup and return items as directed.
  • Remove tablecloths and return them to the proper place.
  • Break down tables and return them to storage.
  • Wipe down tables and surfaces as needed.

Room Reset

  • Clear round tables and wipe them down.
  • Take out trash and recycling if needed.
  • Check floors for spills and messes and clean them up.
  • Confirm with the Team Lead what “done” looks like for the night.
